Ingredients

  1. SWG* wraps, 4 8-in/20-cm or 8 6-in/15-cm
  2. 2 Tbsp. / 30 ml olive oil
  3. 1 bunch spinach
  4. 2 Tbsp. / 30 g organic and/or grass-fed cottage cheese or softened (soaked overnight) pine nuts
  5. 2 cloves garlic, grated
  6. Salt to taste

    Toppings (Optional):
  1. ½ lb. / 225 gm chicken breast, grilled and sliced thinly
  2. 20 olives, pitted and halved
  3. 20 cherry tomatoes, halved
  4. 4 artichoke hearts, sliced
  5. ¼ cup / 60 g vegan, grass-fed or organic yellow cheese, crumbled

Directions

  1. Preheat the oven to 400°F / 200°C
  2. Lightly coat both sides of the SWG* wraps with a small amount of olive oil using a pastry brush. Arrange the wraps on baking trays and set aside.
  3. Meanwhile, prepare your pesto by combining the remaining olive oil with the spinach, pine nuts or cottage cheese, and garlic in a blender or food processor. Pulse beat to process for 2 minutes, adding 2 tablespoons of water as needed.
  4. Sprinkle in a dash of salt, or adjust the amount to suit your taste.
  5. Place the baking sheet in the preheated oven and for approximately 5 minutes, or until wraps are slightly toasted.
  6. Remove from heat, and evenly spread the prepared pesto sauce over the toasted wraps; arrange your toppings with equal distribution of all the remaining ingredients. Return to the oven and bake for 3 minutes more or until crust turns crispy.

  1. Hi there, I have found some great tasting wraps that I thought would be a great replacement but noticed in one of your comments that one should avoid monoglycerides. I hadn’t noticed this before but my wraps has that in it. Must I avoid it now? The product is called: Flax Roll-Ups (Natural Lavash) by Bake Sense, Damascus Bakery (USA). Since moving here (temporary) from the UK, I find it extremely difficult to find good quality unprocessed food here. Also all the bread here contains soooo much sugar that I have not eaten a slice since moving here a year ago, I only eat bread when I’m back home for visits. Pls advise, thanks a lot.

There may be different names, such as “wholemeal” instead of “100% whole grain,” or “sprouted wheat” instead of “SWG” or “sprouted whole grain,” but it’s all the same.

    The fact that some of the foods we suggest are lesser known is a big part of their advantage – they are less mass-produced and so less manipulated and more nutritious and supportive of healthy weight management.

  6. As is becoming the norm I am confused about serving size. If I use 8 small wraps, is one serving size one whole small wrap? Or is it a slice of a small wrap? If I use large wraps the slice size is going to be different so therefore not consistent. Can you help me understand this please?

  7. The difference between SWG and whole grain is that in SWG, the grain is allowed to sprout before milling, which makes the final product more digestible. These products are available in Canada – often just called sprouted. 100% whole grain products are definitely acceptable alternatives.

  8. SWG wrap – wow! Here in the Rio Grande Valley they just call them torillas.
    Tortillas are a daily Hispanic staple for breakfast, lunch and sometimes dinner; it is the way we use white bread for every meal. As I have learned there are various wraps like pita wrap, and SWG wrap.
