Ingredients

  1. 3 Tbsp. / 45 ml olive oil
  2. 2 onions, chopped
  3. 1 red bell pepper, chopped
  4. 2 jalapeno peppers, chopped
  5. 6 tomatoes, chopped
  6. 5 garlic cloves, minced
  7. 2.2 lb. / 990 gm raw turkey breast, cut to bite size
  8. 4 cups / 960 ml water
  9. 1 cup / 130 gm carrots cut to cubes
  10. 1 cup / 140 gm rutabaga, cut to cubes
  11. ½ cup / 70 gm black pitted olives
  12. 2 Tbsp. / 16 gm chili powder
  13. 1 tsp. / 3 gm red pepper flakes
  14. 3 Tbsp. / 45 ml hot sauce

Directions

  1. In a large Dutch oven, heat the olive oil over high heat; add the onions and sauté until skin turns translucent.
  2. Add the peppers, tomatoes, and garlic; continue to sauté for a minute more.
  3. Add the turkey pieces a handful at a time, and stir after each addition; lower the heat and simmer, covered, for 5 minutes.
  4. Stir in the carrots, rutabaga, chili powder, red pepper flakes, hot sauce, and water.
  5. Turn up the heat and bring back to a boil; let boil for a couple of minutes before reducing the heat.
  6. Uncover and simmer for about 20 minutes more.

Serving Size: 1½ cups / 340 ml

  1. Hi I’ve just joined and I’m busy reading all the recipes as I plan my menu’s…
    If 2 carrots serves 12, then 1 carrot serves 6… So for 1 person I’ll probably get 1 cube of carrot… I could easily eat a whole carrot just for me…
    I’m guessing the potion sizes must be very small…

  3. what is a rutabaga? A rutabaga looks like a large turnip. It’s usually purple-ish with white. Most likely waxed, and they’re yellow/orange colored on the inside. Pretty hard to cut through! But well worth the effort. My mom always made this the same way as mashed potatoes except without adding milk. Delish!

  4. This sounds really good, but… we are a two-person senior household. The recipe serves 12. I can scale it back, but that’s additional work. It would be very helpful if the site offered a “scale” function that would allow for scaling the recipe to serve 2 or 4 for example. Plus, there is no indication whether it “keeps well in freezer” for future dinners. We don’t mind superb leftovers as long as it isn’t for 7 days running. 🙂 I understand Trim Down Club is focused on science-based weight loss (that’s why I joined), but I am a little surprised that there is no nutritional data for the recipes. Thanks for considering this comment and feedback.
