First, congratulations on becoming a vegan.
Second, just go through the Menu Planner program and choose at least the minimum number of foods in each category that you would be willing to eat.
The program will produce daily menus for you to meet your needs, and you can use these as examples of how to meal plan (taking into account that the program does not add seasonings or free vegetables as you will find at the end of your week’s worth of menus).
If you want, you are welcome to post a menu or two here, along with your gender, age, height, weight, and workout schedule, and I can see if you are getting menus that reflect your needs.

Hi Speedy44, I have been a vegetarian for most of my life – at least 40years, so am pretty used to finding alternatives, but did struggle at first with this diet, so you are not alone. I gave up cheese and milk at home a few years ago but am not a strict vegan as I eat eggs and don’t refuse milk/cheese if I’m out. I also eat yoghurt and have restarted eating cottage cheese. If you have given these up then there are various protein products to try, though its taken me a while to find them in shops: tofu, Quorn, tempeh for example. Also pulses of various sorts are a good form of protein. Since starting the diet plan 3 weeks ago I am eating a lot more protein foods than I’m used to and feeling more energetic.
    Hope this helps

Dear Slimasharon thank you for you’re encouragement, yes you are right, its been a struggle for me to find foods sometimes.I surf the web about vegetarian foods and info,I finally subscribed to vegetarian times.one of the hard thing I found is I don’t know where to find some ingredients like tempeh,(still don’t know how it looks like)anyway, its been an adventure going to some stores to find my foods.I skip milk and eggs and cheese on my diet, bur I love shrimp and fish ,thats
‘ I am working on to eliminate.I now go on line to find some recipes,I discovered Tofu is not that bad,I now love it and learning to cook it.Still a lot to learn.I never feel LOT BETTER switching my diet.I will never go back to meat again, watching forks over knifes”open up my mind to how meat can affect our health, and how cruel they treat animals.Thank you again for sharing you’re story to me about going vegan that long.Have a great day.You encorages me to stay on the right path.

Speedy, maybe try making your own tempeh – you can buy “tempeh starter” over the internet. You can also make your own seitan – again, you can order the gluten (“vital wheat gluten”) on the internet.

Hi Speedy44 – One thing I remeber from when I first made change to vegetarian all those years ago was missing bacon. A friend gave me a tip which really worked and that was to dry roast a handful of sesame seeds for a few seconds till they begin to pop then grind them to a sort of paste. This can be stored in a jar in the fridge for a few days and is delicious spread on toast or sprinkled on hot food or salds. I haven’t had it for ages and don’t know if sesame is somethking we can include in the diet – maybe Ossie can let us know? Keep going mate.

The sesame idea is terrific! A perfect fit for the program.

I have a hard time with the meal planner for vegetarian choices because I don’t think the meal planner gives enough options for nuts and beans at the dinner. It keeps telling me to make more protein choices. I mean chia seeds and flaxseeds are my only choice?

Hi, hikerdee. NO NO NO NO NO!!!!! Thanks for bringing that to our attention. I will forward your query to tech support so they can put the rest of the nuts back.
Also, please see if there is something you like in the “Vegan Substitutes” protein category.
