SandyStephensMemberI have been baking bread for ages, and I use King Arthur 100% whole wheat flour and whole white wheat flour along with Kiing Arthur Bread flour. I am wanting to know if these flours are something that I can use to still continue to make our bread? If not, what can I use as we like “HOMEMADE BREAD”. I do most of my cooking and baking (like breads, rolls) from scratch so that I know what ingredients are in the items my family eats. I want to get started on this right away! I usually do a sourdough bread that has 1/2 100% whole wheat flour and 1/2 bread flour, 1/4 cup sugar, 1/2 cup oil and it will make 2-3 loaves of bread or about 24-38 rolls…. Any help for a NEWBIE at this would be greatly appreciated!!
We also have a HUGE 50×80 garden when we grow anything from corn, okra, lettuce, squash, cucumbers (for pickles) tomatoes, peppers,(all colors), and jalapenos. plus what ever else I might decide! Hope these are ALL on the PLAN!! THANKS!May 3, 2014 at 10:55 pm #19876
Ossie-SharonMemberHi, Sandy. Everything you listed sounds wonderful. 100% is great, and King Arthur is a great brand. Garden-fresh produce is definitely the way to go. The only advice there that I would give would be the following:
1. Try substituting some of the 100% whole grain flour with sprouted whole grain flour – the increased digestibility of the sprouted grains my better support a fat-burning metabolism
2. Try substituting regular sugar for whole evaporated cane juice – it yields nutrients your body needs to better metabolize the sugar part and keep your body in fat-burning mode.
3. Certain oils may be better than others in supporting fat-burning: olive, macadamia nut, and hazelnut are excellent.May 4, 2014 at 2:47 am #19884

Thanks for getting back to me. Can you tell me where to purchase the sprouted whole grain flour and evaporated cane juice? So if I make my own bread, we can still eat it? Is there a way to break it down into slices or something like that? This is a sourdough starter that I’ve had for 25+ years and I would still like to be able to make our bread.May 6, 2014 at 12:55 am #19952

Some health-oriented stores like Whole Foods Market often carry sprouted whole grain flours, and all carry whole evaporated cane juice (you may also find this in some warehouse type stores like CostCo, as well as Target and WalMart). Making your own bread is a great way to control what goes into it, and sourdough adds the benefit of probiotics. Each slice should weigh about 1 ounce (28 grams) – start with cutting it into 1/2-inch slices, then see where you need to adjust the size.
