MemberHelp…a little challenge for all you….can anyone help me adjust one of my all favourite meals to a slimmer version….Melanzane Stacks (eggplant or aubergine to some.) ingredients. large aubergine, fresh breads crumbs, beaten egg, mozzarella and thin cooked ham.
1. slice aubergine in thin slices. dip in egg and then bread crumbs…bake in the oven for 10-15mins
2. slice mozzarella and place a slice on a piece of baked aubergine and add a slice of ham, then stack another aubergine slice on top to make a stack. Make more double stacks with the remaining aubergine slices. then return to the oven for another 10 mins…. it is delicious served with salad but sure it wouldn’t count as a trim down recipe but was wondering if anyone had any idea how it could be tweaked into a healthy option? any ideasFebruary 22, 2013 at 12:05 am #9220Seaborngirl
MemberGoodmorning to all my mates on the “Lifestyle Change Cruise”….what a cracker of a day here. I feel like I haven’t been out on deck for days, but it is only a couple!
JACKIE….that recipe doesn’t sound like you need to change it. Eggplant is being baked, no fats with it….you are not cooking anything with oils or fats. The cheese is the only thing you would need to check the fat level on…but it is the portions for you that will make the difference. Sounds wonderful…I might just turn up for that dinner!! I would suprised if it was a no-no love!
Now I have that out of the way….it has been good to read all the comments. Been a lot of activity and newbies….WELCOME to the newbies. The way we are going this planet will be much lighter soon!!! Lol…and the ship will be riding higher on the waves!!!!
I have been too busy to concentrate on my food intake lately. Just getting pulled away from it all, not eating at the right times, and then making up for it at night!!! Not good. But my weight hasn’t gained on the scales, and I am still noticing a change in my clothing….I don’t really understand all that, but won’t argue with it!!! As long as I am noticing the difference somewhere.
CHIA…I am amazed someone hasn’t designed a better way of treating sleep apnea…a better kind of mask would be good from what I have heard most people say. I am not looking forward to having to sleep on my back. Not sure what happens, but I get anxious when I do…I reckon I feel like I can’t breathe properly and get a tight chest. I have been trying. Maybe I need my upper half in a raised position.I will be taking that up with them when I go in for my appointment, which I am lining up right now…and I have just spoken to the lady, and she said I have it very severely (now I know why I have been so tired!!!), and about the back, she said I was only on my back for a short time, so I can sleep on my side! Yay!!! I’m so excited!!! I just can’t hide it!!! Lol.I can sleep on my side!!!
CHIA…back to you love…life must be pretty difficult right now…I am sure you will sort the food pret out though…there is always another way!!! You could cook like Raddison on a barbie!!! Our power went off all over the area the other night, and I was going to make a lasagne for Tara and her kids! We thought we would drive 20minutes into Gladstone to MacDonalds, but it was out in town as well. So I decided to get the barbecue out and just cook up a mince dish on there. It was lovely!!! Anyway, all the best with it Linda…we were meant to have a storm here…not snow of course…but we didn’t get it. Just a little bit of thunder. But Melbourne got it last night!!! Huge storm….we need it here in the north too!!!
JACKIE…I have just read your wonderful encouragement to Linda (and to the rest of us)….good on you girl…who said you were a “bletherer”???…no way…you don’t talk nonsense!!! What a great gift you have in encouragement. And now it is up to Linda to do what she will with that!! Lol…keep going Linda…you have the rest of your life to do it!!! What is that old song?

RADDISON…good to be hearing from you more mate…always got good advice…straight from the hip!! I like it.
Anyway, I must go…been chinwagging (you see Jackie, I am not a “bletherer”) for long enough…got work to do. Bill and I are driving out to our daughters farm to pick her and the two boys up to stay with us for the weekend. The boys are missing church and seeing their mates…Rani is missing church, and yes seeing her mates as well. She isn’t allowed to drive for long because of her back so they are not getting into town as much lately.
Time to go back to the galley…see you all on deck again later…Bev.

Memberjackiee: I second Seaborngirl and believe your recipe sounds delicious as is. Like she says maybe you could use reduced fat cheese if its available but that’s it. Ask Ossie and see what she thinks!

MemberHi Chia – I had my kitchen done just before Christmas and it took 4 weeks, so I know what you are going through. I wasn’t dieting then but did try and eat reasonably healthily. We put the fridge & microave in the dining room so were just about OK. As you can’t use microwave or cooker only option for hot food is probably eating out or takeaways – don’t worry about it, its only 5 days and we will all help you get back on track once its over.

you were asking about soups – my local cafe which I go to twice a week with Mum makes me lovely vegetarian soups – always different. I don’t have the recipes but you could probably work something out if you can source the ingredients. If you eat meant you could alsways add a little chicken or meat stock. E.g beetroot soup with a swirl of sour creme (you could always leave the cream out or replace with low fat yoghurt), white bean and lemon soup, tomato & basil soup which is made from fresh tomatoes – nothing like the tinned stuff, spiced carrot & corriander with lemon, broccoli & spinach – I wasn’t expecting to like this one but it was delicious. Ading fruit to soup can also add more unusual flavours – try adding apple, orange or lime

MemberHi Jackiee again, I have an aubergine lurking at back of fridge which needs using up so may try a varient of your recipe tonight. I don’t have any cheese left and not going shopping till tomorrow so will try using yoghurt on top, maybe with a little added spice.
I’ll let you know how it went.

Sharon…we bottle our own tomatoes, whole and sauce at the end of summer, but you know I’ve never thought of sticking a tub of low fat yogurt in some to make a tomatoe soup…that’s lunch tomorrow sorted…thanks….good luc with the augergine…I love that dish…I must try beetroot soup sounds delicious and would love the colour too.
Today its all about fish, so made a fish casserole, mild spices, water and tomato salsa, which I use some sauce to add to my hubbys pasta…I just have the casserole with salad… the aromas today are lovely in this kitchen. right away to set the table…if i don’t get back on have a great weekend everyone……

MemberHi all,the whole lot of you are so good at trading ideas.Jackiee,your recipe sounds so good.We will have it with fresh eggplant this summer. Well my clothes that I have not had on since early winter are getting to large.I must be doing something right.The scales I have tell me I am a pound or three less depending on the weather.Sure lifts the sprits.Clothes fitting differently ,that shows.
I had a fun day out with garden club friends.Three of us.We judged a history competition at the elementary school.I did not know how long it takes to do something like this.It was fun and educational for me.I know lots more about our county than I did the day before.Mmm,our young people have a lot of talent. And wish we could have passed out ribbons to all of them.

I am just getting myself organized now…I’m going through the recipes and printing out the ones I like to tuck in a binder. Then I’ll redo my meal planner to give me a guideline and from there should be able to tweak as I like.I’m still struggling with the breads. SWG flour is non-existant where I am, but I can get spelt flour. I tried to make some bread twice (meaning I bribed my mother to do it because I can’t bake at all – seriously). The first time we winged it and it was disasterous. The second time I researched it, and it started great, but then sunk as it baked. I know it is supposed to be dense, but I could have used this for a brick in my garden. Trying it again tomorrow. I’m learning lots of wrong ways to make spelt bread, but eventually I’ll stumble on the right one.
Missed my treadmill all week too… no morning reading for me. My snowblower broke down 2 weeks ago which means last week we had lots and lots of snow…so instead of my 5:30am walks I had 5:30am snow shovelling. 🙁 No snow forecast now for the next week (which probably means my snowblower is fixed) so back to my treadmill/reading schedule tomorrow. I dug my weights out of the closet too and blew the dust off the old weight routine I used years ago and plan to alternate my walking with that.
While I’m not really on the menu plan yet…I hope to start this weekend once I finish organizing myself, I have made a lot of the simpler changes – non-concentrated juices, water, rice pastas, and a few other things that I can’t think of now. I also started eating smaller meals and keep fruit handy for snacks. While I haven’t lost weight yet (only a pound or so) I came to a startling realization this week. I have IBS and thoughout the day my intestines and stuff “gurgle” for what seems to be no apparent reason. I’ve googled it to death and could not figure out what I was doing to cause it. There’s nothing more wonderful to be sitting in a boardroom and hearing low “rrrrrrrrrr’s” as if I was starving to death…fortunately my co-workers are very understanding and keep the teasing and fun-making under control (NOT!!! LOL) But I suddenly realized this week that I haven’t “gurgled” in a long time! I keep thinking back to that presentation that probably drew a lot of us here, about how our body digests certain ingredients in foods…which I think is why I’ve been getting the gurgles. The fact that it stopped is an amazing and unexpected benefit I’m getting out of this program. Now my co-workers have to find something else to make fun of me for (like my insane organizational skills or having my stapler at perfect right angles to the desk and my pens organized by colour).
Back to my recipe organizing I go… Cheers all!

Memberstgeofun: Just do the same as I am here to you. I put her name in caps to catch her eye. Then write my message to her and submit it. I’ve noticed that it is taking longer for her to reply than it did at first. But, there are a lot more people now for her to reply to. If she has to reply to all the people on ALL of the forums, that would take some time. I’m sure she will answer when she gets time 🙂

MemberOSSIE, got a question for you. Where does condensed soup fit on the good-bad scale? I’m cooking a pot roast in the slow cooker tonight and instead of gravy I always use either low-fat or low-sodium cream of mushroom soup with some fresh mushrooms, chopped onion, parsley and water for a sauce. In fact I use cream of mushroom soup a lot instead of other sauces and gravies.
