ilovecollies1691MemberWe love baked potatoes. I am sitting here making next weeks menus. Would love to have a baked potato, but how do I list that? Thanks for your help.

DeborahjjhayesMemberI just cook little ones and measure it one time. Then ,I know what size to fix. I think they don’t put it on there, because then you are tempted with the butter, sour cream, bacon…etc. I sometimes take that same size little potato and cut it up in small slices ,cut up an onion in small slices, Drizzle just a little coconut oil, toss, sprinkle with fajita seasoning and toss again. Put in the oven and roast on 450* for 25 minutes. It is yummy!

Ossie-SharonMemberThanks Deb – great ideas. Ilovecollies: as Deb indicated, just select a potato and bake it, then dress it as you wish (within reason, of course!).

ilovecollies1691MemberI just wanted to know the weight of a potato that would be appropriate. Lists says a “cup of mashed potato” I am guessing about 10 ounces….dry measure is 8 ounces, but a baked potato is not dry 😉
