    How low can I go on the cacao % in chocolate for it to still be acceptable?… 100% is ridiculously bitter.

    Hi, catlucas. 70% and higher is considered ideal, but if you really dislike that, 60% is OK.

    What about a 1/2 ounce of 100% and 1/2 ounce of 56%…that is actually a bearable mix.
