MemberIs it possible to have Coconut Milk listed on the Menu Planner and where would it fit in? Fats? I haven’t been drinking or using Cow’s milk for some time now and was using “So Delicious” Coconut Milk, original. I use to put it in my coffee. I have substituted it for milk when I use the recipe Banana-Strawberry-Oatmeal Breakfast Meal. Is this ok? KD

MemberCoconut milk fits in with fats. 4 tsp is equal to 1 tsp oil or butter.

MemberHi, Shelly. Almond milk is 1 cup to a serving. There are two levels of fat content currently on the market, one very low-fat (so the milk is considered just a carb exchange), and one higher in fat (so it is a carb and a fat).

MemberI bought a half gallon of coconut milk to make a pina coconut papaya shake – I’d like to know more recipes or what I can use it with too – is it 4% or 2% – how’s it fall into the fats? can I use it on cereal? I sure hate to waste it –

See my post on the Coconut milk and Ossie’s response; however, I did want to get back to Ossie about her response because, the coconut milk that I get is the original “So Delicious” brand and it is only 45 calories per cup with only 1gram sugar, 4 grams saturated fat, 0 gram trans fat (total fat 4.5g), 15 mg sodium, total carbohydrates 2 grams, 65 mg potassium, 1 gram dietary fiber, but 0g protein. Hi, Linda. What brand milk did you buy? Most coconut milks are very high in fat (more than 4%), but some are diluted, as in the case of the milk that pasjj5 bought.

MemberHi Ossie, I believe Coconut milk has palm oil (lauric acid based) fat so can be considered much better than other fats. Is that correct?

MemberHi, Phil. Pure coconut milk shouldn’t contain palm oil, but is very high in lauric acid, which has been linked to increases in good cholesterol, as well as medium-chain triglycerides, which can be healing in some liver/digestive disorders. The challenge is that it also provides other saturated fats linked to cardiovascular disease risk, so small amounts are still the secret to use in people without certain gastrointestinal issues.
