    Would someone kindly tell me what is meant by cured, uncured, and pastured? Also, I am using precooked, and probably processed, sliced luncheon meats for selections of poultry (turkey breast) and pork (ham) required by my menu’s. Is this the intent or should I be obtaining these fresh? Thanks…

    Hi, wreedtxk. First, the intent is always to obtain these things fresh, if you can. Organic pastured is the best type of meat/poultry because it means the animal eats its natural diet and is spared unnecessary drugs, so the meat is the healthiest it can be.
    Cured means that the meat is processed with large amounts of artificial nitrites, which can be cancer-causing. Uncured means that these nitrites are not added, but rather the desirable characteristics of nitrites (taste, longer shelf-life) are contributed by natural and less concentrated sources of nitrites (usually from celery) with which the body can better cope.
