I am on week 2 and am wondering how important it is to eat exactly the meal suggested or is it okay to swap for different foods with the same amount of carbs and proteins>

I actually create my own recipes & meals using balanced carbs, proteins…etc
The important thing, in my opinion, is to stick to whole foods. Keep to a minimum any processed foods or high amounts of sugar (sugars from fruit are okay)
