Would two 3-4 inch medium sized dill pickles or 1 giant dill pickle count as a vegetable?
Hi, Deborah. As part of a vegetable, yes, but that amount has a lot of sodium – about a third to a half of your total daily recommendation, unless you can find low-sodium pickles. Pickles have less vitamin content than non-pickled cucumbers, but it you can find the type that is “naturally” pickled, they can be a good source of probiotics (similar to yogurt). I would suggest to have a single medium sized dill pickle on the side and eat a half serving or more of a fresh vegetable.
