I am allergic to eggs and trying to find an easy alternative for tasty breakfasts and lunches. Availability of specialist ingredients scarce in Northern Ireland. Any ideas welcome.
Hi, Michaelward. For omelettes: if you can’t find chickpea flour, just use mashed cooked chickpeas. For cooked egg whites, try organic tofu. You can make an egg-less salad by mixing lightly mashed cooked/canned chickpeas with chopped tofu, and a vegan mayonnaise, and something similar for a casserole.
