What can I use to substitute leafy greens? I only eat leafy greens in smoothies because I’m not a big fan of the bitter taste but I know they are good for me. I have been using nopales (cactus) in my diet but I want to know what it can substitute, hoping it can be a substitute for leafy greens. Please advise.
Hi, niucristy. Nopales pads are excellent! For other benefits of leafy greens, brightly-colored orange and red vegetables (i.e. pumpkin, tomatoes, sweet peppers) are good sources of beta-carotene and potassium, and you can get the calcium, magnesium, and folate from nuts and “sweeter” vegetables such as asparagus.
