What does uncured mean?
Hi, Nadine. Uncured means the meat has not been treated with concentrated “nitrites,” which have been linked to cancer. To get the characteristic taste, celery salt is used, which is a much less concentrated source.
All the products that I have seen that say uncured has tons of sodium in it. How do we find meat that is uncured and low sodium? Can we use meat that is cured if we need low sodium? What is your suggestion.
