Thank you for your answer on salt contents of foods. I’ve heard that our gut pays an important role in our health. I would like to eat more foods that promote healthy bacteria on my gut. I already eat homemade greek yogurt and drink kombucha but would like to incorporate sauerkraut into my diet. I made a Quick Sauerkraut which called for a head of green cabbage, 1/2 c. distilled white vinegar, 1 tbl. coarse sea salt, 1.5 cups water and I added 1 t. caraway seeds because I like them. This mixture was cooked until tender and can be store in refrig for up to 2 weeks. How can I incorporate this kraut into my diet? Is it considered a vegie carb and I could have 1/2 to l cup of it at a meal?
Hi, bookwoman100. That sounds great! One cup (142 grams) is a vegetable exchange. If you would like to count it as a carb, then it is 1/3 of a carb.
