    Exactly what are home fries & is there a recipe for them? Are they classed as a vegetable?

    Hi, sumama. Home fries are home-made “French” fries (fried potatoes). They do not count as a vegetable because potatoes are a starchy vegetable, and so this items counts as a carb plus a fat (because of the relatively high amount of oil generally used in preparation).

    If my home fried are in a meal with a vegetable I use my olive oil for my potato instead of on my veggi. I just slice a medium to large potato put in a bowl and add my olive oil along with a favorite herb some onion and just mix until all are coated. and just fry in a non stick pan.. and what I dont eat right away I refrig. the rest for another day.
