MemberAvocado and Three Bean Salad
Recipe from: Created by Cathy Pollak for NoblePig.com | Serves: 8
Ingredients
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can red kidney beans, drained and rinsed
1 (15 oz) can garbanzo beans, drained and rinsed
1 (15 oz) can whole kernal corn, drained
1 large orange or red bell pepper, diced
12 grape or cherry tomatoes, halved
1 bunch cilantro, chopped
2 large avocados, peeled, pitted and diced
juice of 2 limes
1/2 cup olive oil
salt and pepper to taste
2 cloves garlic, mashed or finely dicedDirections
Mix all ingredients together in a large bowl. Refrigerate for 1 hour before serving.
Note: After cutting up my avocado I tossed it in the lime juice then added the avocado and the juice to the salad. This will help with the avocado not turning brown before serving.January 23, 2017 at 9:07 pm #37554Ossie-Sharon
MemberHi, Theresa. This is an interesting recipe because of all the avocado. However, if you use it to take the place of some carbs, you can have 2 cups of this blend (about 1/8 of the entire recipe) as a meal.

Memberthank you, however, not to be a stickler, but you said “some carbs” lol I am really trying to get the measurements and quantities accurate. I went out and bought a digital food scale to make sure of everything.
So can you tell me how many carbs 2 cups would replace? Thank you
