Tagged: eggplant
I don’t want any of the three choices that are offered under replace this item. They are all salads. Any other vegetable I can use. Thanks
Hi, golfunit. You can use any other non-starchy vegetable. For reference, starchy vegetables include potatoes, yams, peas, corn, parsnips, acorn squash, etc. Any “green” vegetable (including salad type ingredients like tomatoes and carrots) are considered non-starchy.
Thank you. It’s not that I don’t like eggplant, I’ve just had no luck cooking it. I’ve tried several different ways, and I get too much gooey every way I try.
