    The weekly menu lists “Fu.” I am clueless. I’ve decided to just make it “free choice” until I hear otherwise. Thanks.

    Hi, citykitty. Fu is similar to seitan – a gluten-based traditional Japanese meat substitute often called “wheat meat), but in contrast to seitan, fu still has some of the starch components of wheat in it. Because it has the properties of both bread and protein, it can soak up seasonings very well to give a texture similar to meat.
