MemberDoes anyone in this forum suffer from lactose intolerance like me? How do you deal with it? Do you follow a lactose-free diet or take lactose enzyme tablets? Just thought I’d ask, because looking at the recipes in the cookbook, I see where lots of dairy products are called for. I was considering using butter, egg, mayonnaise substitutes, but is that wise considering all the hoopla about sticking with the real deal. Oh, yeah, what about using sugar substitutes like stevia or agave nectar? Are those okay or what?

MemberStevia is preferred over agave because it does not add any sugar for your liver to deal with.
As for lactose issues, until members give you their input, lactase tablets can be quite effective. If you don’t wish to go that route, I would suggest that you use natural milk substitutes. Just a note, eggs do not contain lactose, so you don’t need to substitute for those, and butter contains virtually none, so probably no need there as well.January 18, 2013 at 5:33 pm #6624SKinnY286
