All those delicious recipes that I can’t use–because beans are the main protein, or peas are the vegetable. I’ve learned that asparagus makes a wonderful substitute for fresh peas, but. . .
Have you any suggestions?
Hi, SouthD. Asparagus can be a culinary substitute for peas, even though the nutritional properties are a bit different. Some people like to use softened nuts (soak them overnight) or corn as substitutes to provide some non-legume plant-based protein.
