ilovecollies1691MemberI am now starting my 3rd week. I have lost 2 pounds each week, and I am very happy with that! One thing that also makes me VERY HAPPY is the recipes that call for 4, 8 or 12 servings! This means that I can make it once, FREEZE the rest in appropriate servings, and then I don’t have to cook it the next few times I want to add it to my menu. This is a real time saver!! Also, I have decided its time in my life to listen to an expert on the subject of nutrition, as doing it myself was not so good, or I would not be here! I have tried several NEW foods, and found that I actually love them. My husband has been begging for asparagus for YEARS. NO way was I going to eat that! Well, now I love it. Just sauté it in a teaspoon full of olive oil or coconut oil, with a little bit of onions and crushed garlic…true heaven!! AND ASPARAGUS IS A FREE FOOD!! YEAH!! When you have a 1/2 a banana for breakfast…us the other 1/2 later in the day in a shake made with milk and ice cubes in the blender! (Or if you have a dog, the love bananas!) Right now, I have the Sweet Potato Soup on cooking, and I have decided to make it into a cold soup. No garlic in this one. All the same ingredients, but adding cinnamon, clove, nutmeg and ginger. A good appetizer for dinner. I had this for dinner several times on a cruise ship and it was wonderful. So glad to find the recipe here. Today is my “cooking” day, so trying several new recipes to add to the next few weeks. Next up: Lemon Cottage Cheese Muffins…sounds wonderful. But then, I HATE cottage cheese…but love muffins!
