    I can’t always get low fat ricotta cheese – – I live in a small, rural town. So when the Menu Planner calls for 1/4 cup 0-2% ricotta cheese, but I’m only able to get organic whole milk ricotta, should I reduce the portion size?

    Hi, SlimSong. Yes – in that case, it would be 2 tablespoons.
