I’m a new member and was reviewing the first week’s menu plan. I usually drink skim milk and noticed it calls foe 2% milk. Why the higher fat content?

Hi, NanieMom, and welcome. The problem with most skim milks is that artificially produced whiteners and texturizers are added in to make up for the loss of color and creaminess with fat extraction. These additive have been suggested to cause just as many problems as the fat itself. The best option is to find organic pastured milk, where there are no such additions, and the fat is very good quality.
