    In your “eat all you want” vegetables list, I notice that carrots, peas, and corn are not listed. I’m not surprised, but could you give me your explanation as to why?

    Peas and corn are on the starchy vegetable list. Carrots are on the regular vegetable list. 1 cup = 1/2 carb
    Do you have the exchange list?

    Peas 1/2 cup= 1/2 carb+1/2PROTEIN legumes
    1/2 c corn kernels=1/2 Carb starchy vegetables
    carrots 1 cup =1/2 carb regular vegetables

    What are “exchanges” and how are they used in this plan? Is there information on this at your web site?

    Hi, BobbyW. Those vegetables have a notable amount of carbohydrates, and so affect blood sugar and hormones more than “free” vegetables, and thus portions should be controlled counted in the diet plan.
    The exchanges are similar to those created by the American Diabetes Association. They are used like building blocks for your daily menus. The general values are as follows:
    Carb = 15 g carbohydrates + 3 g protein
    Protein = 7 g protein + 5 g fat
    Fat = 5 g fat
    Fruit = 15 g carbohydrate
    Protein = 5 g carbohydrate + 2 g protein
    Sweet = 15 g carbohydrates + 5 g fat
    Of course these are approximate and have some overlap, but generlly they fit.
