I see that many dairy products used in recipes call for “raw” milk of cheese. I have 3 questions – why raw dairy, is there a nutritional benefit? Can one substitute other products that aren’t raw? And where does one purchase raw dairy products.

1. Raw dairy is believed to retain more of the beneficial properties of milk – see the featured article http://www.trimdownclub.com/all-about-raw-milk
2. Organic, fortified milk and dairy are acceptable substitutes
3. Raw dairy sources can be located through the following link: http://www.realmilk.com/where.html
