    Being a fan of cilantro (and love artichokes) — your pesto recipe sounds wonderful and delicious, however; I would greatly appreciate your input on the ‘best’ pesto ever. It is Giada’s recipe: 2 Cups fresh basil, 1/4 Cup toasted pine nuts, 1/2 Cup fresh grated parmesan, 2/3 cup extra virgin olive oil, 1 garlic clove, 1/2 tsp salt, 1/4 tsp black pepper. In a food processor: Pulse to blend to consistency desired.
    How does this recipe compare with yours as-far-as nutrition/calories? 🙂

    Hi, DaisyDew. Her recipe is much higher in fat and protein. For each 1/2 cup of dip, ours provides 1/2 protein and 1/2 fat exchange (about 3.5 grams of protein and 2.5 grams of fat, with minimal carbohydrates), and hers provides just over 1 exchange of protein 7.5 grams) and 11.5 fat exchanges (58 grams), with 1/2 carbohydrate exchange (7.5 grams). If you want to use hers it is therefore suggested to use a smaller amount.

    Thank you for your input, it is most appreciated! I’m at a point in my life that what I ‘WANT’ isn’t in the best interest of my weight-loss program. 🙂 I will be trying your pesto and I’m sure I will find it very good.

    Also, I would like to say that your website is very user friendly which helps tremendously when ‘struggling’ to do something that is foreign to your nature—in my case—eating what pleases my taste-buds and loving breads/pastas/sauces/unhealthy snacks and convenience foods. (sigh)
