Hi: I’m brand new and am starting tomorrow. My first trip to the grocery store was over $200; mainly because I don’t have any of the types of flour, etc. required for a healthy meal. You want potato chips? Call me! Anyway, I misread the lemon muffin recipe (where it says to use a mini muffin pan) and bought a regular size muffin pan. Can I make a full size muffin and cut it into 4 pieces? Or do I need to go back and exchange it for a mini muffin pan. I know it sounds dumb but cleaning out the pantry and starting a new way of eating has been over-whelming for me.

With regard to the muffin recipe, note that you may need to keep them in the over a little longer than the recipe states (so once they start to brown but are still uncooked in the middle, cover them with foil to prevent burning of the tops). Since a serving size for the recipe is 2 mini-muffins, a whole regular one is fine.
