I enjoy a green salad with olive oil and vinegar. Can I exchange this for anything? Also, I am unfamiliar with “raw” cheese. Please explain. I live in Mexico and many items are not found here. Fruits and veggies are plentiful, though. Any ideas?
Hi, ADEaton. A green salad can be exchanged for any non-starchy vegetable, and the olive oil for any fat or salad dressing (vinegar is free).
Raw cheese is made from milk that has not been pasteurized or homogenized – there is quite a bit of this in Mexico, but it has also been linked to food-borne illnesses, so an alternative would be pasteurized organic farm-fresh and/or grass-fed cheese, where the cows are allowed to graze on grass and while shrubbery instead of grains.
