Stuffed Bell Peppers. We love chili with beans so make a big pot with about 12 servings, so that’s six meals divided into containers and frozen. Decided to have stuffed bell peppers the other day but didn’t want rice etc as shown in the recipe. Used one serving of our chilli to stuff 4 halves of orange bell peppers. Chopped some baby spinach to sprinkle on top and some low fat cheese. Deeelicious with a side salad and so easy to do.
