Why is Stevia used as a sweetener in recipes? If I choose to use a little refined sugar, or even raw sugar, what is the conversion?
Hi, Loretta. Stevia or monk fruit are often used because many of our members prefer to have a non-caloric sweetener. If you use raw sugar, the conversion is about 8 units to 1 unit of Stevia – if you do this, note that you will need to take into account the extra carbohydrates (1 Tablespoon of sugar is 1 exchange).
