I would like to know if it is healthy to drink the beet-water residue from boiling beets, if yes how much and would this be considered 1 or 2 vegetable servings?
Also, I enjoy drinking carrot juice which I make with my juice maker. I would like to know if I can substitute a glass of carrot juice with a vegetable serving, if yes how much juice and how many vegetable servings would this be?
Hi, lbarlow112. That’s an excellent idea. Beet cooking water would be “free,” while carrot juice would be a vegetable serving (1/2 cup or 120 ml = 1 exchange).
