Would pickled vegetables be okay for vegetables of your choice
Hi, Wayne5. If they are lightly fermented, yes. However, if you like highly pickled, high-salt foods such as pickles and sauerkraut, not really – the processing depletes them of the key nutrients that we count on vegetables to provide. However, most are ‘free,’ so if you don’t overdo them (again, salt is a concern), you don’t need to count them in your plan, and they can provide some probiotics (‘good’ bacteria).
