hi, i was looking at the recipe for choc mousse, i have no idea what whole cane juice is, can anyone tell me. Im in the UK and a lot of the recipes etc, i do NOT understand

Sugar cane is the original source of sugar, from which juice is squeezed and then dried to make granulated sugar, in turn refined to make white sugar. Whole cane juice is not refined, and so it contains nutrients needed for proper metabolism of the sugar.
