I’m thinking about making the chocolate mousse recipe. One of the ingredients is evaporated whole cane. Is this sugar? If so, should I
be using the coconut sugar or something else?
Hi, EBurrell. Yes evaporated whole cane juice is indeed sugar, which has not been refined and so contains what is needed to metabolize it. Coconut sugar can be substituted if you wish.
