Heat 1 gluten free corn tortilla on both sides until crunchy. Sautee onion in remaining oil. scramble egg with the green onion,sausage,and cheese. Place the scrambled egg on top of crunchy corn tortilla. Drizzle with hot sauce,sprinkle tomato, and add 1 tsp of fat free sour cream.
Slow Cooker Apple-Onion Pork Loin
The pork will take on some of the apple flavor. It is one of the best things I’ve ever cooked!! A family favorite.
Avocado Black-eyed Pea Dip
Drain all ingredients well in a colanderexcept avocado. Mix ingredients in a large bowl.Add avocado and sprinkle with red wine vinegar. Toss gently. Serve immediately with chips, gluten free.
Quinoa Pilaf
Heat oil in a saucepan over medium-high heat. Cook onion in oil for 5 minutes, or until translucent. Add carrot, and cook 3 minutes more. Stir in quinoa and vegetable broth, bring to a boil. Reduce to a simmer, cover, and cook 15 to 20 minutes, or until quinoa is tender and fluffy. In a bowl, toss quinoa together with walnuts and parsley. Serve hot or at room temp.
