Sweet Squash Delight
Cube squash and boil in a pot of water until tender.
Drain and set aside……in a pan put butter and saute the onion and garlic until tender……add the cooked squash, walnuts and sprinkle the cinnamon over the mixture. Cook until everything is blended. You can add a little lite salt and pepper if you like. I sometimes add a little sugar free pancake syrup.
Egg, Cheese, & Spinach on Muffin
Heat spinach in microwave 30 sec
Toast muffin, top w/cheese & hot spinach
Poache egg, tops it all
Banana Ice “Cream”
Slice banana and freeze. Once frozen put in food processor and blend until smooth and creamy.
