Spelt Flour Flatbread

In a bowl, mix flour, oil and salt.
Gradually add enough water until a dough is formed which leaves the bowl clean.
Knead the dough on a firm surface for at least 2 minutes.
Place dough back in the bowl and leave for at least 20 minutes.
Cut dough into 8 equal pieces.
On a floured surface roll each piece into a thin round flatbread
lightly oil a heavy pan on a medium heat. Add a flatbread to the pan and cook for 1 to 2 minutes until the surface bubbles.
Turn over and repeat.
Do the same for each flatbread
