Ingredients

  1. 2 cups 13-bean blend
  2. 1 small onion
  3. 1 head garlic
  4. 3 tsps veg. soup base
  5. 2 cans diced tomatoes

Directions

  1. Rinse and soak beans overnight.
  2. Drain then add to 5 cups of water, simmer for 2.5 hrs. Until beans tender.
  3. Sauté in olive oil garlic and onion add to pot.
  4. Mix soup base in 2 cups boiling water add to pot.
  5. Add 2 cans of diced tomatoes; bring back to simmer so everything will be hot and blended.
