Ingredients
- 2 cups 13-bean blend
- 1 small onion
- 1 head garlic
- 3 tsps veg. soup base
- 2 cans diced tomatoes
Directions
- Rinse and soak beans overnight.
- Drain then add to 5 cups of water, simmer for 2.5 hrs. Until beans tender.
- Sauté in olive oil garlic and onion add to pot.
- Mix soup base in 2 cups boiling water add to pot.
- Add 2 cans of diced tomatoes; bring back to simmer so everything will be hot and blended.
