Ingredients

  1. ¼ cup / 60 ml apple cider vinegar, divided
  2. 1 cup / 240 ml apple cider
  3. 1 onion, minced
  4. 2 Tbsp. / 28 ml extra virgin olive oil
  5. 1 red bell pepper, diced
  6. Dash (about ½ packet) Stevia powder
  7. 2 green apples, cored and sliced in thick wedges
  8. ¼ cup / 30 gm whole almonds, toasted, chopped
  9. 3 ribs celery, sliced thinly
  10. 1 head / 360 g leaf lettuce, torn and/or 8 cups / 360 g baby greens
  11. ½ medium grapefruit, cut into bite-sized pieces

Directions

  1. Heat apple cider combined with 2 Tbs / 30 ml apple cider vinegar in small saucepan.
  2. Bring to a rolling boil and let boil until liquid is reduced to a syrup consistency.
  3. Remove from heat and let stand to cool.
  4. In the same pan, pour the remaining apple cider vinegar; add in the onions, olive oil, green bell pepper, and bell pepper.
  5. Whisk to combine well until Stevia dissolves.
  6. Remove from heat and transfer to a bowl together with the apples, almonds, celery, grapefruit, and lettuce. Trickle in the reduced cider mixture over the salad.
