Ingredients
- Coconut Oil, 2 tbsp (26 g)
- Coconut Milk, 8 oz (232 g)
- Boneless chicken thighs, 16 oz (448 g)
- Vinegar, cider, 4 tablespoons (60 g)
- Garlic, 4 garlic clove (16 g)
- Table salt, 1/3 teaspoon (1 g)
- Water, 1/4 cup (60 g)
- 1/2 red jalapeno (7 g)
Instructions
- Dice the chicken.
- In a skillet, warm the coconut oil, then add the chicken.
- Cook for 2 -3 minutes at medium heat, then add the apple cider vinegar, water and garlic cloves and cook for 3 more minutes.
- Add salt and chili pepper, and cook for approximately 1 minute, until the liquid boils down.
- Add the coconut milk and simmer for 5-10 minutes, stirring frequently, until the liquid thickens.

Im new, Diabetic 1, when the net carbs are printed is that 6 carbs equal 15 carbs each net carb, or is 6 the carb count? Im confused as some recipes are net and some are carbs.

I dont understand why my dinners dont have any type of veggies in them would it be okay to add some, I’m trying to follow my menu plan but I feel like dinners are just a meaty meal without veggies

Hi – I’m a little confused. I printed out the shopping list and it has 8.14 fl oz of Milk beverage, coconut, sweetened. I thought that we were supposed to have unsweetened for ketosis. When I looked for this product the only one I found is from Silk. It is Dairy Free Half and Half Creamy Oatmilk and Coconut milk. Can I use this and if not what can I use and is it supposed to be sweetened. It is in the Vegan Substitute section of the shopping list. If not what can I use and also I could not get buttermilk. What can I use as a replacement for that?

It’s important to note that the coconut milk to which we refer in these recipes is the canned type for cooking, not for drinking.

Hi, Kya1. Buttermilk is just slightly soured regular milk, so you can add some sour cream to full-fat milk – for one cup of keto buttermilk, add 5 tablespoons of full-fat sour cream to 3/4 cup full-fat milk. Note that it will have 100 calories more per cup than regular buttermilk.

What are the substitutes for coconut oil and coconut milk?
Hi, LiveFree. Any other healthy oil (olive, avocado, organic canola, almond, hazelnut, etc. but not flaxseed – it shouldn’t be heated) will do instead of coconut oil. To replace the coconut milk, you can use regular dairy light cream or a non-dairy, no-sugar-added milky beverage with an extra 1/2 cup of oil to keep it keto.
I don’t like dark chicken meat. What can I use instead?
