Ingredients

  • Asparagus, Fresh, 2 lb (908 g)
  • Heavy Cream, 1 cup (233 g)
  • Butter, No Salt, 2.5 tablespoon (35 g)
  • Chicken Stock, 1 cups (243 g)
  • Garlic, 1 garlic clove (4 g)
  • Parsley, 2 Tablespoon (8 g)
  • Table salt, 1/3 teaspoon (13 g)
  • Black Pepper, 1/2 tsp, ground (1 g)

Instructions

  1. Clean the asparagus, trim the ends and cut into 1" pieces.
  2. In a heavy pot, melt butter. Add garlic and cook for 1 minute.
  3. Add asparagus, salt and pepper, and cook for 5 minutes or until the asparagus turn golden.
  4. Add broth and simmer over low heat, covered, until asparagus is tender but still green, (10-15 minutes).
  5. Remove from the stove and with a blender mix the asparagus until smooth.
  6. Add the asparagus back to the pot, add the heavy cream and stir until hot.
  7. Add salt and pepper to taste and garnish with parsley.
