Ingredients
- 2 qt. / L water
- 2 cups / 385 g lentils, preferably sprouted, uncooked
- 1 Tbsp. / 15 ml olive oil
- 1 onion, chopped
- 2 cups / 360 g tomatoes, chopped
- 2 medium avocados, puréed
- 3 cups / 48 g kale, chopped Seasonings (optional)
- 2 cloves fresh garlic, minced
- 2 tsp. /3½ g fresh oregano, chopped
- or 1 tsp / 1 g dried oregano
- 1 bay leaf
- ¼ cup / 10 g celery leaves, chopped
- 1½ Tbsp. / 4 g fresh basil, chopped or 1½ tsp. / 1 g dried basil
Directions
- Bring 6 cups of water to a rolling boil in a heavy saucepot; stir in the lentils and cook for 20 minutes, until just tender.
- Drain in a sieve and set aside.
- Place the olive oil in a soup pot over medium high heat, and stir in the onion and salt; sauté until the skins becom translucent.
- Add the lentils, tomatoes, water, and seasonings, and continue to cook for about 5 minutes more.
- Add the avocado puree and chopped kale.
- Turn off the heat, cover, and let stand for a minute before serving.
- Ladle into individual soup bowls and serve with a slice of avocado, if desired.

Hi, nansinnic. Many people don’t respond well to the relatively bitter cooking water. If it doesn’t bother you, then by all means, use it.
Can I pop the soup in a blender to make it smooth.

made this yesterday and found it tasteless. Needs a broth of some type instead of water. I would also add some herbs. Not a fan of this soup.

Easy to make, a bit bland, though. I added lemongrass paste and some chili paste. Hopefully that didn’t up the sodium factor too much!
