Ingredients

  1. 2 qt. / L water
  2. 2 cups / 385 g lentils, preferably sprouted, uncooked
  3. 1 Tbsp. / 15 ml olive oil
  4. 1 onion, chopped
  5. 2 cups / 360 g tomatoes, chopped
  6. 2 medium avocados, puréed
  7. 3 cups / 48 g kale, chopped
  8. Seasonings (optional)
  9. 2 cloves fresh garlic, minced
  10. 2 tsp. /3½ g fresh oregano, chopped
  11. or 1 tsp / 1 g dried oregano
  12. 1 bay leaf
  13. ¼ cup / 10 g celery leaves, chopped
  14. 1½ Tbsp. / 4 g fresh basil, chopped or 1½ tsp. / 1 g dried basil

Directions

  1. Bring 6 cups of water to a rolling boil in a heavy saucepot; stir in the lentils and cook for 20 minutes, until just tender.
  2. Drain in a sieve and set aside.
  3. Place the olive oil in a soup pot over medium high heat, and stir in the onion and salt; sauté until the skins becom translucent.
  4. Add the lentils, tomatoes, water, and seasonings, and continue to cook for about 5 minutes more.
  5. Add the avocado puree and chopped kale.
  6. Turn off the heat, cover, and let stand for a minute before serving.
  7. Ladle into individual soup bowls and serve with a slice of avocado, if desired.

    Please be more specific in your preparation
