Ingredients

  1. 2 ripe bananas (pureed)
  2. 3 eggs
  3. 1/4 tsp baking soda
  4. 1/2 tsp vanilla extract
  5. 1 tsp pumpkin pie spice (or blend of cinnamon, ginger, nutmeg)
  6. 2 tbsp butter or coconut oil for frying

Directions

  1. Puree the bananas (tip: a hand blender makes very quick work of pureeing the bananas, not to mention it’s a nice thing to have around the kitchen for soups, sauces, etc.)
  2. Add remaining ingredients (except for butter, reserve that for the pan) and mix well ( You can also use a hand blender to mix all ingredients together).
  3. Heat up the butter or coconut oil in a cast iron skillet or pan. Put a little less than 1/4 cup of batter for each pancake. let cook for a few minutes on each side.

  1. I thought my recipes would automatically pop up after my selection (or approval) of each day’s ingredients. This didn’t happen. Will Imhave to fish for recipes, or should I not have chosen the Meal Planner option?

    • Hi Suko, and welcome 🙂 The Menu Planner only does that for the recipes that are already in the food lists. For newer recipes that have not yet been added into the system, you can use them to substitute for the main ingredient in your meal. You can also match up the exchanges visible at the end of each recipe and when you click on “Exchange mode” in the toolbar above your menu. It doesn’t need to be a perfect match to work.
