Ingredients
- ½ lb. / 230 g boneless lean beef (e.g., sirloin), preferably organic pastured, cut into bite-sized pieces
- or fatty cut (e.g., porterhouse) for keto version
- 1 Tbsp. / 5 ml olive or sesame oil
- 1 Tbsp. / 8 gm sesame seeds
- ¼ cup / 30 gm whole wheat, arrowroot, brown rice, or quinoa flour
- or 2 tsp / 10 ml kudzu, dissolved in 2 Tbsp / 30 ml cold water for keto version
- 1¼ cups / 300 ml vegetable broth, preferably MSG-free/low-sodium
- 2 Tbsp. / 30 ml soy sauce, preferably organic MSG-free/low-sodium
- ¼ tsp. / ½ gm chopped fresh ginger root
- 1 clove garlic, minced
- 4 cups / 350 gm chopped fresh broccoli
Directions
- In a small bowl, stir together flour or kudzu slurry, broth, and soy sauce until well-blended.
- In a large non-stick skillet over high heat, heat oil with sesame seeds. Add beef and stir-fry for 2 to 4 minutes, or until browned.
- Stir in broth mixture, ginger, garlic, and broccoli. Bring to a boil, then reduce heat. Simmer 5 to 10 minutes, or until sauce thickens.
I don’t like broccoli is there another vegetable I can use with the same nutritional value?
Hi, Penny. Cauliflower or a deep green leafy vegetable would have the most similar nutritional value, but any non-starchy vegetable would be great.

I realized at the last minute that I didn’t have the ingredients to make the the chicken dish that was on my menu. I switched to the next day’s dinner – the beef & broccoli stir-fry. I have done that on other days, but was wondering if that makes a difference. Is the menu for each day carefully made to have a certain amount of calories, or enough bulk or anything that I’m throwing off by doing this?

This recipe suggests serving over rice which would be very nice. However, my menu planner has combined it with Broccoli Cheesy Potato Bake and does not offer rice as a replacement option. Is there any way the menu planner is able to take the ‘recommended’ side dishes into consideration when planning the menu?
