Ingredients
- 1 lb / 454 g) well-washed green peanuts
- 1 Tbsp/ 14 ml or less mineral-rich salt or substitute (to taste)
- 1 qt/l water
Directions
- Fill clean [sand-scrubbed, no residue] 2-quart/liter pot with peanuts.
- Pour salt over peanuts.
- Pour water over peanuts.
- Bring to full boil.
- Boil until peanuts are consistency of baked beans—or softer. Test often by removing a peanut, shelling, and tasting.
- When done, pour into crocus sack.
- Rinse filled sack to remove external salt from peanuts.
- Empty washed peanuts from crocus sack onto dry, absorbant surface.
- Serve when dry, after approximately 2 hours.
