Ingredients
- 4 c low-fat cheddar and mozzarella mixture (preferably organic pastured), shredded
- 2 cans green chilies, chopped
- 10 oz. all-natural turkey sausage (preferably uncured), crumbled, or extra-lean ground turkey (preferably pastured), cooked and drained
- 12 organic eggs, omega-3 or pastured
- 2 tsp. ground black pepper
- 1 chopped white onion sautéed
- 1 chopped bell pepper sautéedr
- Salt or substitute to taste
Directions
- In a 9×13 casserole dish sprayed with non-stick cooking spray, sprinkle all of the cheese to cover the bottom of the dish.
- Evenly sprinkle the green chilies over the cheese, followed by the crumbled turkey, then the bell pepper and onion.
- Whisk the eggs together and pour over ingredients.
- Bake 400°F for 45 minutes.
