    Ingredients

    1. 1 cup millet, uncooked
    2. 2 cups water
    3. ¼ cup coconut milk
    4. 1 Tbsp maple syrup
    5. 4 oz. walnuts or almonds

    Directions

    1. Rinse millet in a colander under cool running until the water appears clear rather than cloudy.
    2. Toast the millet grains in a dry pot for approximately 4 minutes, stirring constantly to prevent burning. When the millet is toasted, add water.
    3. Stir the millet and allow it to boil over medium-high heat. Once the mixture comes to a boil, lower the heat. Cover and allow the millet to cook for at least 20 minutes, stirring and checking occasionally to see whether the water has been absorbed.
    4. Remove from heat, and let sit covered for an additional 5 minutes. Fluff with a fork.
    5. Add remaining ingredients and enjoy!
