Ingredients

  • Garlic, 2 garlic cloves (8 g)
  • White wine, 3/4 cup (173 g)
  • Heavy cream, 1 cup (233 g)
  • Lemon, 1 zest (2 g)
  • Parsley, 1 tablespoon (4 g)
  • Chives, chopped, 1 tablespoon (3 g)
  • Cod Fish, 2 fillets (462 g)
  • Cauliflower, 1 head small (265 g)
  • Ghee, 3 tablespoons (43 g)
  • Cheddar cheese, shredded, 1/2 cup (57 g)
  • Nutmeg, 1 tablespoon (7 g)
  • Table salt, 1 teaspoon (5 g)
  • Spring Onions (Scallions), 1/2 cup (49 g)
  • Sour Cream, 1/2 cup (108 g)
  • Broccoli, 1 lb (450 g)

Instructions

  1. Preheat oven to 400°F/200 °C
  2. Cut the cauliflower and the broccoli into florets and steam until soft. Drain thoroughly
  3. Add the softened ghee, sour cream, cheddar cheese, chives, grated nutmeg and salt in a food processor and process until smooth
  4. In a frying pan, heat the olive oil then add scallions and garlic and stir for a couple of minutes.
  5. Add the white wine and reduce by half (2-3 minutes).
  6. Add heavy cream, lemon zest, and herbs and simmer for 5 minutes.
  7. Add salt, to taste
  8. Put the fish fillets in an oven tray and pour over the sauce
  9. Spread the broccoli and cauliflower mash on top evenly.
  10. Bake for 30 minutes or until the top is browned
  11. Sprinkle with some fresh parsley and serve.
