Ingredients
- 75 g Carrot
- 50 g Spinach
- 29 g Spring onion
- 2 cloves Garlic
- 70 g Yam
- 20 g Coriander
- 1-pint water
- 1 Tbsp. Olive oil
Directions
- Wash and chop all vegetables.
- Preheat oil in pan, and add garlic and allow it to ‘sweat’ off in oil until slightly brown.
- Add water and bring up to the boil.
- Then cover and simmer until vegetables are cooked.
- Add seasonings 5 mins before the end of cooking time.
